Jorge Vallejo of Quintonil in Mexico City and Daniela Soto-Innes of Rubra in Punta de Mita come together for an evening dedicated to modern Mexican cuisine. Drawing from shared heritage and contemporary technique, the chefs collaborate on a thoughtfully composed five-course menu that balances tradition with innovation.

Elevating the experience, the menu is paired with bespoke beverage creations by Handshake Speakeasy, ranked the No. 1 bar in the world in 2024 and No. 2 in 2025 by The World’s 50 Best Bars. Their team brings a signature approach to cocktail craft—precise, expressive, and boundary-pushing—adding a dynamic narrative to the progression of the menu.
